GRAPE VARIETY: 100% Chardonnay
VINEYARDS LOCATION: South West exposition, altitude 350 m a.s.l. These hills, of recent geological formation, have on the surface a large mainly calcareous soil, with a high presence of quartz sand and very fine lime, alternating with compact layers of gray sandstone.
AVERAGE PLANTING YEAR: 1978, traditional Guyot.
HARVEST: Manual, the first week of September.
VINIFICATION AND AGEING: Manual harvest in 25 kg crates in 2 dierent moments, only when the grapes are perfectly ripen. Immediately aer harvest, the grapes are taken to cold storage rooms where they undergo a reduction in temperature up to 6° C, which is essential for preserving the best aromas during pressing. Alcoholic and malolactic fermentation in Austrian and French first passage barriques. 3 weekly batonnages for 5 months, then 2 times for 11 months.
