The blend combines equal proportions of Mtsvane and Rkatsiteli: 50% of each indigenous grape variety. The grapes come from Ethnoโs organically farmed vineyards on the slopes of the ancient Manavi fortress. Harvest yields range from 2,500 to 3,000 kilograms per hectare. Grapes are picked by hand and pressed before being vinified and aged in qvevri. Spontaneous fermentation takes place with wild yeasts, connecting the wineโs production to the vineyard and the character of its fruit.
